Each Friday evening we like to get together to celebrate the week, the day or the moment, by sharing this lovely refreshing virgin cocktail. This month we´ve taken our inspiration from South America. Combining the lovely taste of lime and mint, this virgin mojito delights your taste buds.

Cocktail: La Crisalida Virgin Mojito

Large handful of mint leaves
Juice from 1 lime
Lime quarters
1 tbsp rice syrup (or other sweetener)
Sparkling water
Crushed ice
Extra mint leaves for decoration
Slice of lime for decoration

Roughly tear the mint leaves and place them in the bottom of a large mixing jug (or cocktail shaker!). Add the lime juice. Lightly bash the lime juice into the mint leaves – you should really start to smell the mint here! Add the rice syrup (or other sweetener, maybe agave syrup) and bash a little more.

Then pour in the sparkling water, stirring well and add in the crushed ice. You can add in the lime quarters (and also the limes that you have squeezed into the bottom of the mixing jug or cocktail shaker). Pour into a cocktail glass, add an extra sprig of mint and a slice of lime on the side. Serve. Relax and rejuvenate in style, Enjoy!
