Bright and bold, this juice is wonderful and will bring a smile to your face as you make it and drink!
The main reason for the lovely bright red colour of this juice is beetroot. Beetroot can taste quite earthy, so if you´ve not juiced a beetroot before, start off with a smaller amount and increase over time. Make sure you find raw beetroot to put through your juicer – don´t use the precooked prepacked variety (very little juice will come out). Sometimes, when you buy raw beetroot it comes with the leaves still attached; if you do find this, then keep the leaves and use them in your salad as they taste good too. If all you can find in your local market is the precooked and prepacked beetroot, then make your juice as normal, but place the beetroot in your blender and blitz to combine. Remember, add avocado into your blender for a thicker, creamier juice. For more sweetness you can also add an apple, although, as we said last month in our Carroty-lunch juice article carrots are often pretty sweet just on their own. Beetroot has been used as a natural colouring for food and also clothing for centuries, so we suggest wearing an apron or dark coloured clothing when you make this juice, just in case! ½ red pepper
2cm unwaxed lemon
Give all of your ingredients a good wash, under running water, then place them all in your juicer. Simple.
If you can only find waxed lemons then remember to cut off the outside layer of skin, leaving on as much pith (the white bit just beneath the skin) as you can. Suppliers sometimes apply a wax coating to some lemons so that they last longer in your fridge. Check the labels on any non-organic lemons, as it should say.
