Juice recipe Carrots, cucumber and avocado: juice retreat Spain

Juicy morning is one of our breakfast juices and is a lovely way to start your day.

We know some people love celery and some people hate it. Celery can be quite strong in a juice, so if you are not very keen on celery, we suggest that you start with half a stick and build up over time. You can leave the leaves on when you juice – celery leaves contain high amounts of vitamin C and calcium. (You can also use celery leaves in soups, or to add to fresh salads to bring a slightly different taste to your dish).

Celery has many health benefits. It has high antioxidant properties, so by including celery in your diet on a regular basis you will look after your cell membranes – and looking after your cell membranes will keep your body and mind in tip top shape. Celery is high in vitamin K, A, C, B6, folate and calcium. It also has anti-inflammatory properties so if you have inflammation in the body – joint pain (e.g. from arthritis), gout and so on – or experience a urinary tract infection, you might want to increase your intake of celery. Celery has a high water content, bringing hydration to your body and at the same time it can help to prevent bloating. One added bonus is that celery is low calorie and contains zero fat, so it is fantastic if you wish to lose some weight.

Pepinos are Spanish cucumbers and are about half the size of a standard cucumber – maybe 10 to 15 centimetres long. They are rough on the outside, so if you want to include pepino in your salad then you need to peel them. For juicing its fine to use the whole pepino without peeling first.

Juicy morning Juice recipe

Serves: 1
Calories: 352

2 apples
2 carrots
½ pepino (Spanish cucumber) or ¼ standard salad cucumber
1 stick celery
2cm slice of unwaxed lemon
1/3 avocado

Give the apples, carrots, pepino, cucumber and lemon a wash in cold running water. (You may want to cut the top off the carrots, but it´s not essential). If your juicer has a large chute, then you can simply put the apples, carrots, pepino, celery and lemon through your juicer without cutting anything up. Pour the juice into your blender, then add the third of the avocado and blend for 30 to 45 seconds.

Wash your juicer and blender before enjoying your juice.

Low fruit and no fruit juice options

If you want to cut out or reduce the amount of fruit sugars you eat, you can try our no fruit or low fruit options below:

Low fruit Juicy Morning: Replace one apple with one large carrot and add the other half pepino (making a full pepino in total).

No fruit Juicy morning: replace the two apples with two extra carrots, use the whole of the pepino and add an extra stick of celery.
