Gardeners delight cucumber juice recipe

This month we are delighted to share our new cucumber juice recipe – Gardeners Delight! As the name implies, you will find the ingredients for this juice in many gardens as we move toward the summer months.

Cucumber is a great ingredient to add to any juice. Due to the high water content it brings a lightness and freshness to the juice. It is also low in calories – great if you are wanting to lose some weight! Cucumbers are also high in fibre, so it works well with the spinach (or kale) in this recipe to support our digestive health. You will also get nutritional benefits too – cucumbers are a great source of many vitamins (A, C, K and B), and minerals (including in particular potassium, magnesium and manganese).

If you have any cucumber left, you can also add a slice onto closed eyes – lie back and relax. Cucumber has great soothing properties.

Remember, if you can only find small leaf spinach then it will be better to blend the spinach into your juice, using either a hand blender or a large jug blender. This is because most centrifugal juicers will not manage small spinach leaves very well – you get little juice and most of the leaves get dumped into the pulp container. Kale leaves are great for centrifugal juicers as they are large and leafy!

If you want a lighter juice (and less calories) leave out the avocado. This will bring the calorie count in this juice down to 180.

Gardeners delight: cucumber juice recipe

Serves: 1
Calories: 364

Ingredients

Handful of large leaf spinach (or kale)
1 cucumber
3 large carrots
2cm unwaxed lemon
1/3 avocado

Method

Wash the spinach (or kale) well beneath cold running water to make sure you get all the grit or dirt out from the leaves – pay particular attention to the stem area. Wash the carrots, cucumber and lemon. You could take off the top of the carrots if you want and remember to take off the outer skin from the lemon if you are using a waxed variety. (The skin on lemon can be quite hard on your juicer, so sometimes it makes sense to remove the outer later of lemon skin anyhow – leave the pith on).

Put these veggies through your juicer.

Pour the juice into your blender and add the avocado flesh. Blend well for 30 seconds.

Wash up the juicer and blender. Then enjoy your juice!

Add an apple option

If you find that this juice is a little too “vegetable” for you, consider adding half or a full apple. Carrots are usually sweet, but sometimes an apple just makes it more palatable for some people. Try to gradually cut down over time – drinking a pure vegetable juice is great for your body!
