Relax – enjoy our lovely pineapple juice recipe

It´s the middle of the summer now here in Spain and temperatures are still high! Sometimes a slice of pineapple is a lovely pick-me-up. We love to include pineapple in a juice occasionally, so this month we are sharing our recipe for Relax: a creamy, nutritious pineapple juice.

Pineapple is particularly high in Vitamin C and manganese, as well as many other vitamins and minerals. Vitamin C keeps your immune system working in tip-top health. One function of manganese (a naturally occurring mineral) in your body is to maintain a healthy metabolism. Both manganese and Vitamin C have antioxidant properties, which are said to help to combat chronic diseases. Pineapple also contains fibre, which supports your digestive system and encourages digestive health. (Read our earlier articles on digestive health part 1 and part 2).

As the juice is relatively sweet (due to the fruit sugars), it´s a great way to encourage children to eat some of their five-a-day vegetables, as they are unlikely to notice the addition of the broccoli!

Juicing tip: Use the stem from the broccoli in your juice, as it will give you more juice than using the florets. Use the broccoli florets raw in a salad, with some hummus or in our lovely broccoli, tofu and cashew nut stir-fry.

Relax: pineapple juice recipe

Serves: 1
Calories: 199

Ingredients

1 large chunk fresh pineapple
2 apples
½ courgette
2cm broccoli stem
2cm unwaxed lemon

Method

Prepare your fruit and vegetables. You can leave the skin on the outside of your pineapple, if you have a strong juicer. Alternatively, trim off the harder outer edge. Remove any labels off your fruit and veggies, then wash them beneath cold running water. (If you are using a waxed lemon, then trim off the outer layer, leaving the pith on).

Put all the ingredients through your juicer.

Wash your juicer and enjoy your juice!

Reduced fruit option

If you want to reduce the amount of fruit sugars (fructose) in your juice, then you can swap out the two apples. Replace the apples with an extra half of courgette and half a cucumber:

1 large chunk fresh pineapple
1 courgette
½ cucumber
2cm broccoli stem
2cm unwaxed lemon
