Summer is here and with it we are sharing one of our lovely bright red carrot juice recipes.
The bright colour in the juice comes from a combination of the wonderful orange carrots, together with the colourful berries. Berries are abundant at this time of the year in the northern hemisphere. If you go to a farmers market and see some on sale at a good price, buy them. When you get home, wash them, eat some fresh and then pop the rest into your freezer. In this recipe we use frozen berries, because it brings a lovely coolness, almost iciness to the juice. You can also use fresh berries – try a combination of raspberries, blue berries and blackberries. Yum!
Juicing tip! Use frozen berries to bring a cooler temperature to your juice. Berries do no juice very well in a centrifugal juicer, so you will need to use a blender. Remember to allow the frozen berries to defrost for a few minutes before blending – this makes it less work for your blender (not all blenders are made to deal with frozen berries or ice).
Summer Sun: carrot juice recipe
Calories: 415 (with avocado), 234 (without avocado)
Handful frozen berries
2cm unwaxed lemon
1/3 avocado, stone and skin removed
Take the frozen berries out of the fridge a few minutes before you need them to allow them to slightly defrost. Make sure you wash all of your vegetables beneath cold running water and remove any stickers off your pear. If you have a waxed lemon, remove the outer skin (leave the pith on).
Put the carrots, pear, cabbage and lemon through your juicer. Pour the juice into a blender and add the frozen berries and avocado. Blitz for 30 seconds. (You can instead use a hand blender here).
Wash your juicer, blender and enjoy your juice!
