Sunburst red pepper juice recipe

Have you tried juicing bell peppers? This month we share our tasty red pepper juice recipe, which we call “Sunburst”. It uses red and yellow peppers, plus a little bit of beetroot to produce a vibrant and flavoursome juice. I called it sunburst, partly due to the colour (I imagine a lovely sunrise when I see this juice) and because it is one of our breakfast juices.

Red and yellow peppers contain large quantities of vitamin C – as well as B6 and folate. Vitamin C supports your immune system and as we head towards winter in the northern hemisphere, keeping your immune system in top working order will help protect against those pesky colds and sniffles doing the rounds.

As it is one of our breakfast juices we add avocado to the recipe, but it tastes great without it. If you do not use avocado, the calorie count drops to 189.

Juices can form part of a healthy plant-based diet and are great to include, particularly if you are looking to lose weight.

Sunburst: red pepper juice recipe

Serves: 1
Calories: 465

Ingredients

½ red pepper
½ yellow pepper
½ beetroot
1 apple
1 pepino (cucumber)
2cm unwaxed lemon (or remove the other layer of the skin)
½ avocado

Method

Wash all the ingredients (except the avocado) beneath cold running water. Juice red pepper, yellow pepper, beetroot, apple, cucumber and lemon. Then pour the juice into your blender, add the avocado flesh and blend for 30-60 seconds. Pour into a glass, wash your juicer and blender, then enjoy!

Fruit-free red pepper juice recipe

Sometimes it is good to drink a pure vegetable juice, so for the fruit-free version of this red pepper juice, we suggest that you swap the apple and add instead 2 large carrots. Carrots will bring a natural sweetness to the juice. Alternatively, add more cucumber (it freshens and lightens the juice) or 1 small courgette, to bring more smoothness to the juice.
